A few years ago for Father's Day, my wife got me a smoker. It was an entry level smoker and allowed me to learn about the art of smoking food. Things like "low and slow," or "if you're lookin' you're not cookin'."
My key learning was that this smoker was not very good at regulating temperature, and therefore too much work involved to make the end product enjoyable.
Fast forward a few years and I bought a pellet smoker. These are special smokers which are powered by electricity, and which have a hopper of wood pellets which are fed by an auger into a fire pot. It leverages convection principles to circulate heat and flavor into the barrel. I have found it generally much easier to regulate temperature and therefore have better quality food.
